You wanna know a secret about me? I love transforming food. It's basically the mad scientist in me. There's truly nothing more fun and playful than taking a whole food like a fruit or vegetable and transforming it into something totally different and unique. It's part of the reason I started Weelicious in the first place and this Shaved Vegetable Salad is a perfect example.

Some kids (and adults for that matter) just don't like certain vegetables. Time and time again, though I'm happily surprised when I take a less than loved vegetable and turn it into something the kids love. Chloe is a perfect example. For the longest time she vowed that she hated radishes, but when I shaved them through this mandoline, drizzled the slices with olive oil, a squeeze of lemon juice and a sprinkle of salt she would eat a plate full. The same goes for Kenya when it comes to carrot. He's never been the biggest fan, but in this Shaved Vegetable Salad he will gobble them up.

Ingredients

  • Use any combination of these vegetables:
  • fennel
  • cucumbers
  • carrots (any color), peeled
  • celery
  • radishes (any type)
  • asparagus
  • beets (any color), peeled
  • artichoke heart, raw
  • zucchini
  • yellow or patty pan squash
  • cabbage
  • kohlrabi 
  • turnips
  • parsnips
  • celeriac
  • rutabaga

Preparation

1. Using a mandoline, thinly slice vegetables and place on a plate or platter.
2. Lightly drizzle with olive oil, a squeeze of lemon juice and sprinkle with kosher or maldon salt.
