About Catherine and Weelicious

Hi! I’m Catherine, mom to Kenya (9), Chloe (7) and Gemma (1). I created Weelicious way back in 2007 as a resource for parents to see how easy it is to expose children to wholesome, delicious homemade food.

After personally struggling with what to feed my first child when he was an infant, I recognized a “new mom” dilemma that I could not find a solution for anywhere I searched: simple, nutritious, flavorful recipes for parents to make for their young eaters. Since that resource didn’t exist, I put my culinary school degree and life experience as a cook to work and created Weelicious. Over the years, as my children and the children of Weelicious readers got older, I expanded the website to address the mealtime needs of the entire family. My goals are to inspire you with readily available ingredients; recipes that are fast, fresh and easy; and provide you with a trove of trusted information.

I’ve written two cookbooks for families. My first, Weelicious: One Family. One Meal. is meant to be an inspirational feeding guide, weaving together my personal experience feeding my own kids, with fact-based evidence on children and eating, and featuring 140 original “fast, fresh and easy” recipes. My second book, Weelicious Lunches: Think Outside the Lunchbox, was inspired by two things: 1) my (continuing) daily habit of posting a snapshot of my kids’ school lunch on social media and 2) hearing one too many times from parents bemoaning the redundant nature of making school lunch for their children everyday. I packed the book with over 160 fun recipes to provide time-challenged parents (actually, what parent isn’t time challenged?) a variety of realistic solutions beyond the standard PB&J sandwich.

In 2015, spurred on once again by the voices of our awesome Weelicious community, I launched One Potato, the first organic home meal delivery kit service focused specifically on the dinnertime needs of families. Using Weelicious users' most favorite recipes as well as many new ones, the company’s mission is keeping meals delicious and simple, so that every dinner appeals to both adults and kids. One Potato sends all of the ingredients pre-prepped so that every meal gets on the table in 30 minutes or less and so kids can actually help their parents make the meals. We wanted a company that was socially and environmentally responsible so we built in a charitable component, providing a meal to a family in need for every box the company sells, sourcing produce and proteins from farmers dedicated to respecting the land and animals they raise, and packaging and shipping the meals in and with fully recyclable, biodegradable and/or reusable materials. We currently deliver to all of California, Nevada and Arizona with plans to expand nationwide.

I author the monthly “Snack Mom” column in Parenting Magazine, have appeared multiple times in People, Self and Real Simple magazines, on The Today Show, ABC’s The Chew, Access Hollywood Live, Good Morning America and Fox News as well as appearing regularly on the Food Network’s Guy’s Grocery Games and doing the occasional guest spot on Food Network’s Next Food Network Star and Duff Till Dawn.
